Fish tycoon question?

What age does the fish have to be for you to find out what kind it is? And when I breed the orange stick fish and the spined stickfish I got golden fstickfish but they arent very healthy. The health bar is green but its not full. Should I be concerned? I don't think it has ick and I'm not over-feeding them so what could be the problem?
